SEL

This spiral like looking dish is a speciality of Uttarakhand as well as its adjacent nation, Nepal. From all the dishes made in Uttarakhand, it is a unique dish in itself look wise.


It is sweet in taste and can be eaten in breakfast with tea, milk,whey,curd etc. and you may serve it as dessert.

It is crunchy often but not always.


Ingredients:

1.Rice flour

2.ghee

3.sugar

4. a little baking soda.


Recipe:

Its recipe is very simple.

1) First of all take a big utensil the same in which we knead flour for making chapatis. We have to now tip or pour the rice flour in that utensil and add sugar, ghee, and baking soda simultaneously into the flour and mash or squash it.

2) After a while, start adding a little water to it and keep doing that until it seems to be a thick paste or gravy. Make sure that the paste is not diluted, it needs to to be thick so that it doesn't create any problem later.

3) Now when our material (aforementioned thick paste) is ready, in a relatively big cauldron pour ghee and wait for it to get heated. As soon as it's done, just like we make jalebi, we need to take paste in our one hand and expel it from your hand into the ghee in the cauldron in such a way that it makes a circle and keep doing that until the paste in your hand finishes.

4) After a while it will change its color and will look like aforementioned picture. Your dish (Sel) is ready to be served.
