Undoubtedly the most famous pahari recipe from Uttarakhand is basically a dal(cereal), locally known as Bhatt Ki Churdkani.
Usually eaten with rice, this dish is another one of the best dishes made by (dadis) grandmothers.

Ingredients:
- Black bean
- White flour
- Cumin seeds
- Asafoetida
- Red chilly
- Coriander powder
- Turmeric powder
- Garam masala
- Salt
- Oil and Water
Recipe:
1) Firstly let the oil be heated in a cauldron and once it's done throw cumin seeds and asafoetida simultaneously into it and wait until it splutters or crackles.
2) As early as it crackles, pour bhatt ki dal (black beans) into the cauldron and grill it until it's peel comes out and make sure the beans doesn't burn, keep the flame low.
3) Now pour wheat flour into it and grill it until its color turns brown.
4) Now add all the aforementioned spices(ingredients) and salt to it and grill for half a minute. Subsequently pour 4 cup water in it and lid it for a couple of minutes. Now unlid it and keep moving it with a spatula or frying spoon so as to prevent the flour from burning if sticks to the cauldron.
5) Now, you'll see, the gravy changing its color. As the flour was brown earlier and now it may be green or black. This complete process takes approximately 15 minutes.
Turn the gas off. Your " Bhatt Ki Churdkani" is ready to be served with rice
