DUBKA PALYO ( DUBKA CURRY )

It is another one of them, the very famous, well renowned curry from The Dev Bhoomi- Uttarakhand. Dubka is a pahadi word ( the pieces you can see in the picture) and palyo ( pahadi word) means cuury. I like to call it grandma's one of the best curry because there are many more and the tally never ends. A delicious dish which is served with rice.


DUBKA PALYO (DUBKA CURRY)

Ingredients:

- 1/2 bowl gram

- Salt

- Ghee

- Wheat flour or gram flour

- Whey

- Spices namely, turmeric powder, red chilly powder, roasted cumin and coriander powder


Its Recipe & Ingredients:

1) Take a couple of fist full with gram and dip them in the water for 4-5 hours. After it's done, grind it and make the paste of it. Now mix a little salt in that paste so that the dubka's get salty. 2) Secondly, place a cauldron into the flames and wait till it is heated. As soon as it is heated, put ghee and then grill the wheat flour or gram flour with it.

3) When the flour is grilled, put the whey in that and keep moving that mixture(so as to prevent the flour from sticking into the cauldron and getting burned).

4) Then put the spices one by one viz, salt, turmeric powder,red chilly powder, roasted cumin and coriander powder and boil it.

5) When it is half boiled take the grinded paste in your fist and make it round in shape and small in size and keep putting those round dubkas in that cauldron.

5) Keep moving the curry in the cauldron and your dubka palyo will be ready in 10-15 minutes.
